MICROWAVE – DESI KHANA CABBAGE STUFFED CAPSICUMS An elegant snack of capsicums filled with a cabbage and Bengal gram flour mixture. Preparation time: 10 minutes. Cooking time: 6 minutes. Serves 2. 2 medium sized capsicums oil for greasing For the filling ½ cup grates cabbage ½ cup Bengal gram 2tsp sugar ¼ teaspoon citric acid crystals 1 tsp green chilli- ginger paste 2 tbsp chopped coriander ¾ tsp fruit salt salt to taste For tempering ½ tsdp mustered seeds (rai) ¼ tsp asafetida (hing ) 1 tsp sesame seeds (til) 2 tbsp oil 1.Cut the capsicum into halves vertically. Remove the seeds carefully so as to retain the shape of the halves. 2.Mix all the ingradients for the filling except the fruit salt in a bowl with 4 tablespoon of water. 3.Add the fruit salt with 1 teaspoon of water and mix gently. 4.Fill the capsicum half with the filling. 5.Place the capsicums haves in a greased glass bowl. Cover the lid and microwave on HIGH for three minutes.. 6.allow the capsicum to cool. Cut each capsicum half into thick strips. How to proceed. 1.Heat the oil in a large pan, add mustard seeds. When they crackle, add the sesame seeds and asafetida 2.Add the capsicum pieces and sauté for 1 to 2 minutes , till they brown lightloy Serve hot. METHI MUTTER MALAI A tasty combination of fenugreek leaves and green peas, enriched with cream, cashew nuts and poppy seeds. Preparation time: 7 minutes. Cooking time. Serves 2 to 3. 1 ½ cups chopped fenugreek (methi) leaves ¼ tsp cumin seeds (jeera) ½ cup green peas ½ cup milk 3tbspcream a pinch of sugar 2 tbsp oil salt to taste To be ground into a paste 1 onoin 1 green chilly 12mm( ½”) piece ginger 1 clove garlic 2 tbsp cashew nuts 2 tbsp poppy seeds 9kus kus) 1. Wash the fenugreek leaves, add ½ teaspoon of salt and leave aside for 10 minutes. 2. In a glass bowl, combine 1 table spoon of oil with the fenugreek leaves and Microwave on HIGH FOR 2 minutes.Remove and keep aside. 3. In another glass bowl, combine the green peas with 2 table spoons of water and micro wave on HIGH for 1 minute. 4. 4.In a glass bowl, add the remaining 1 table spoon of oil, the prepared paste and microwave on HIGH Afor 2minutes. 5. 5.Add the milk,cream, sugar, salt, and the cooked fenugreek and green peas and microwave on HIGH for another 2 minutes. 6.
