Ingredients: | | | Mango pieces | : | 6 cups (cubed) | | Semolina | : | ½ cup | | Sugar | : | ¼ to ½ cup | | Melted ghee | : | 2 tbsp | | Cardamoms | : | 3 | | Water | : | 1 cup | |
| Preparation: | | Keep a quarter-cup of finely cubed mango aside. Take the remaining mango in a mixer, blend into fine, smooth puree, without adding water. | | Heat half the quantity of ghee in a skillet, add l semolina and fry till good aroma comes. Remove from fire and keep it aside. | | Take water and sugar in a thick bottomed wide pan. Heat them slowly until sugar melts. Now keep the fire in high and heat to boil the mixture. When the sugar syrup thickens, stir in blended mango puree and toasted semolina. | | Cook the mixture, on medium heat, stirring in-between until the mixture reduces by one third. Sprinkle crushed cardamom and finely cubed mango pieces that were kept aside. Stir for another 3 minutes and then turn off the heat. | | Grease a pan or tray with melted ghee and pour the cooked halwa into the pan. Let it cool and cut into squares. Serve it warm or cold. | |
