Ingredients:-
Yoghurt(sour thick curd) 1cup
Thick curd ½cup
Salt to taste
Besan 1tbsp
Turmeric pinch
For vegetables:Bottlegourd ½
ladyfingers 8
Drumsticks 2(fresh)
Tomatoes 2
Carrot 3
For Masala:greenchillies 3-4
Ginger 1-1½ cm
Salt to taste
Garlic 3 pods
Fresh cococnut 1½ tbsp
Roasted corianderseeds 1tsp
Roasted fenugreekseeds ½tsp
Mustards(no roasting) little
Grind them in mixier to a fine paste,keep aside.
For tempering (bhagar):
Oil,Mustardseeds,red chillies(dry)
Asafoetida(pinch),cumminseeds,curryleaves.
For garnishing:fresh coriander leaves.
Method:-
Wash all vegetables
Cut big pieces lady fingers
Make two halves tomatoes
Cut bottle gourd to big chunks.
Chop carrot big pieces
Cut long bits drumsticks & fry them in 1 tbsp oil for 3-4 minutes, keep aside
Mix two types of curds and whip them vigorously for 3-4 minutes.
Grind the masala paste to it and whip again.
Boil it on medium flame for 3 minutes,stir ocassionally(to avoid lumps). It gives fine flavour.
Add fried(cooked) vegetables and boil it for 8-10 more minutes.
Put the tempering finally before removing from the heat.
Handy tips:-If the sauce is too sour (according the yoghurt)Roast some very tiny bits of onion and add to it.
Or mix 1 tsp of besan with 2 tsp of water and add to the sauce(boil it)
Suggestion:if you have sour yoghurt(very)minimize the yoghurt(½cup),add more quantity(1½cup) curd.
