Ingredients:

Medium sized round Brinjals - 5
Groundnuts: 1/2 cup
Red chillies : 4-5 Medium
Coriander leaves : 1 cup
Coconut : 1/2 cup (Grated)
Coriander Seeds : 1/4 cup
Onion: 1 Medium sized
Garlic: 4 cloves
Tomatos : 2
Cardamom : 2 small sticks
Cloves: 4
Oil : 1 Cup
Curry leaves
Chilli Powder
Salt to taste.
Method:
1.Cut Brinjals into 4 halves with stalk intact. soak in salt water for 10 min.
2.Fry groudnuts and Red chilles grind it along with fresh coriander leaves, dry coconut,Coriander seeds, onion, garlic,tomatos,cardamon, cloves and salt.
3.Make a paste of this and stuff it in cut Brinjals. Now heat a pressure pan, add oil and fry the stuffed Brinjals for 5 min.
4.Remove them and add curry leaves in the same oil and add the remaining masala into it.
5.Add little chille powder, salt to taste and these fried stuffed brinjals into it. stir it lightly, close and cook for 2 whistles.
6.Serve hot
