Tomato Rice

Ingredients: Tomatoes-150gm Coconut -one half of a coconut Basmati Rice-250gm(1 cup) onions-2 ,cut into long slits. green chillies-4 Dalchini(cinnamon sticks)-2 elaichi-2 cloves-3 Bay leaf-2 cashew nuts salt to taste. Preparation: put the tomatoes in hot water for 2 mins. Remove them from water and peel the thin skin out from them. Grind the tomatoes in a mixer and extract the juice with the help of a muslin cloth. Extract milk from coconut. Grate the coconut. Add one glass of water to the coconut and grind it. Extract the coconut milk with the help of muslin cloth or fine fabric. Mix the tomato extract and coconut milk. It should be equivalent to 2 cups since rice is 1 cup.Put the liquid extract on the stove. Wash the Rice and soak it for 1/2 hour. Take a pan and put little oil in it. Fry the cloves ,dalchini,bay leaf ,elaichi and cashew nuts. Add the green chillies and slit onions. Then drain water from the basmati rice and add them . Just fry for 2 mins. Now add the boiling liquid to the rice and let it cook till the rice is soft(do not add any extra water). Add salt according to your taste. Good to eat with any traditional raita.
