Ingredients :

Basmati rice - 4cups
Beans - 100gm
Carrot- 100gm
Green peas - 50gm
Coriander leaf - 1cup
potato-1medium sized
Mint leaf - 1/2cup
Green chillies- 8 to 10
Coconut milk - 3cups
Water - 3cups
Salt-as required.normally i use 1tea spoon for 2cups of rice
Lemon juice-extracted from 1/2lemon
GingerGarlic paste - 2teaspoons
Saunf(fennel seeds)-a pinch
Shajeera(caraway seeds)-1/2 tea spoon
biryani leaf- 10
Mace flower-3
Cloves-10
cinnamom-2inch piece
cardamom(elachi)-2
garammasala powder-1spoon.
onion-1medium sized
oil and ghee together -1/4cup.[1:1 ratio]
Procedure:
----------
1.Chop carrots and beans ,potato to small sized cubes and keep aside.And also make slits in green chillies.
2).Make a paste of 1/4 cup mint leaf and 1/2cup coriander leaf and keep aside.
3).In a pressure pan season all the spices(cinnamom,cloves,biryani leaf,saunf,cardamom,shazeera,mace flower)and also few mint leaves and then add onion slices and saute for a while.
4).Add chopped beans,carrot peas,potato and green chillies and saute for 5minutes.
5).Now add gingergarlic paste,mint-corianderleaf paste and saute for 1/2 minute and then add basmati rice and saute.
6).Now add coconut milk,water,salt and lemon juice and a 1spoon of garammasala powder and cover the lid of pressure cooker pressure cook for 2 whistles.(If u r preparing in rice cooker transfer all the contents to electric rice cooker and cook till done.)
7).Garnish with coriander leaves and serve hot with raitha.
