Ingredients :
Wheat Flour- 2 cups
Water- 3/4 th cup
Salt- As required
Potatoes- 2
Curry leaves- 2 leaflets
Cilantro leaves- a bunch
Green Chillies- 4 (finely chopped)
Onion-1/2 cup chopped
Mint Leaves- 5 or 6 leaves
Cumin Seeds- 1/2 teaspoon
Coriander Powder- 1/2 tsp
Mustard Seeds- 1/2 tsp
Channa Daal (Bengal Gram)- 1/2 tsp
Urad Daal (Black Gram)- 1/2 tsp
Grated Ginger- 1 tsp
Lemon Juice- From 1 lemon
Oil
Procedure :
Mix wheatflour with a little salt and enough water in a bowl to a stiff dough. Cover the bowl with damp cloth or a plate and keep aside for 30 minutes.
For Filling :
Boil potatoes and peel potatoes and mash them well and mix salt and turmeric.
Heat oil in kadai,add channa daal,urad daal,mustard seeds. When the mustard seed began to splutter, add cumin seeds,finely chopped greeen chillies, grated ginger, mint leaf, curry leaf and saute for a while.Add onions and fry until onion turns golden brown.
Now add mashed potato to the above mixture and stir well, saute for a while and add little coriander powder,and cover the lid and cook until done.
Switch off the stove. Add lemon juice and garnish with the cilantro leaves.
Allow it to cool. Now the filling is ready.
Paratha Preparation:
Knead the dough well and make round balls and keep aside.
Take each ball,make them into small sized cups,put the filling in it,and close the top and end by joining the edges of the cups. Now roll them into flat shapped pancakes slowly and gently with the help of rolling pin using wheat flour.Take care to see if the stuffing is not comming out orelse stuffing will stick to pan and get burnt when frying.
Heat nonstick pan, spray oil on it and slowly fry the parathas on both the sides pressing gently with a damp cloth or a spattula with oil on the parataas.
Serve them hot with any gravy curries like channa masaala,chicken masala,etc.
