Ingredients: | | | China Grass | : | ½ packet | | Water | : | 4 cups | | Lemon Juice | : | 1 tsp | | Orange Colour | : | ¼ tsp | | Orange Juice | : | 1 cup | | Orange | : | 1 (sections) | | Cream | : | ¾ cup | | Castor Sugar | : | 3-4 tsp | |
| Preparation: | | Soak china grass in 2 cups of water for 3-4 hours. Add another 2 cups of water and boil till china grass dissolves.Stir in sugar and let it cool slightly. Add orange juice, lemon juice, and orange colour to the mixture. Stir well.Lightly grease a jelly mould with ½ tsp of salad oil. Arrange peeled orange sections at the bottom of the mould and pour ¼ of the jelly mixture in it. Let it cool and set.Arrange another layer of oranges and pour half of the remaining jelly liquid. | | When this is set, pour the left over mixture and orange sections into the mould. Let it set in refrigerator.Do not keep the mould in the freezer compartment; else the jelly will crystallize. | | When serving, dip the mould in a bowl containing slightly warm water and immediately upturn on a plate. The bottom layer of set oranges will then be visible on the top. Beat up the cream with castor sugar till it is thick. Garnish jelly with fruit and cream. Serve. | |
