Typical South Indian Idli

Ingredients:
 
 Par Boiled Rice:1 cup
 Black Gram Dal:½ cup (dehusked)
 Salt:2 tsp
 
Preparation:
 
Clean, wash and soak rice and dal separately in sufficient water for nearly 4-5 hours.Grind dal to a light and fluffy consistency and rice to a grainy consistency.Mix ground ingredients together with salt, using your hand.
 
Cover and set aside for about 10-12 hours to ferment.Stir batter and pour into greased idli moulds and steam for 10 minutes. Serve hot with ghee and coconut chutney.
