If using fresh apricot boil the apricots in a little water on a slow fire till tender and dry. Then rub them through a sieve so as to get a smooth puree. Use canned apricot as it is.
Dissolve sugar in a mixture of orange and lemon juices and stir into apricot puree. Pour into ice trays and place in the freezer of the refrigerator. When half set, take it out and beat it thoroughly. Use as eggbeater or a whisk for this. Put the beaten mixture back into the freezer and let it set till firm. Serve in glass bowls, garnished with pieces of apricot.
Another attractive way of serving it is in fruit shells. If using fruit shells, keep the fruit shells in the refrigerator for some time.
