Ginger Pickle

Ingredients:
 
 Ginger:100 gm
 Salt:1tsp
 Turmeric:a pinch
 Mustard Seeds:¾ tsp
 Asafoetida:¼tsp (powdered)
 Oil:2 tsp
 Lemon Juice:1 tsp (optional)
 
Preparation:
 
Wash ginger and wipe them well leaving no traces of water. Scrape the outer skin and chop into fine pieces. Add salt, turmeric and mix well.
 
Heat oil in a pan and add mustard, when it splutters, add asafetida fry for a while and add the seasoning to the ginger pieces. Finally add lemon juice, mix and keep it in a air tight container.
