Rich Diwali Burfi

Ingredients:
 
 Cashew Nut Powder:1 cup
 Almonds:1 cup
 Sugar:1½ cup
 Ghee:4 tbsp
 Cardamom Powder:1 tsp
 Milk:as required
 
Preparation:
 
Soak almonds in water for 2 hrs. Drain and grind them coarsely, using enough milk.
 
Take a heavy bottomed pan or a non-stick pan. Add ground almond, powdered cashew and sugar. Mix together all the ingredients well. Cook on a medium flame, stirring continuously. Add ghee little by little while stirring. Keep stirring till the mixture becomes thick and starts to leave the sides of the pan and forming into a clean ball.
 
Add cardamom powder at this stage and turn off the heat immediately. Pour this mixture into a greased plate or on a butter paper or on an aluminium foil. Roll thinly with a greased roller. Let it become warm and cut into desired shape.
