Soya Dahi Vadas

Ingredients:
 
 Soya Beans:1 cup
 Black Gram:½ cup
 Green Gram:½ cup (split, dehusked)
 Ginger:1” piece
 Green Chillies:2 (chopped)
 Salt:to taste
 Cumin Seeds:1 tsp (roasted, powdered)
 Curds:2 cups
 Oil:for frying
 Coriander Leaves:for garnishing
 
Preparation:
 
Soak soya beans, black gram dal and green gram separately over night. Grind them coarsely. Add salt, ground ginger and green chillies to it.
 
Make small sized vada. Heat oil in a thick-bottomed kadai and fry vadas to a light brown colour. Soak them in warm water for 5 - 10 minutes. Press and drain the extra water and place in a dish. Meanwhile season curds with mustards, cumin, and curry leaves.
 
Pour seasoned curds, salt and cumin powder over them. Serve garnished with chopped coriander leaves and chopped ginger.
