Coconut Cookies

Ingredients:
 
Grated Coconut:4 cups
Whole Milk:1 ltr
Sugar:200 gm
Vanilla Essence:2 tsp
Almond Essence:1½ tsp
 
Preparation:
 
Take a heavy bottomed pan. Pour milk into it and bring it to a boil. Stir continuously till the milk reduces to half of its quantity approximately to 400 ml. Dissolve sugar in to it. Remove from fire and let it come to the room temperature.
 
Preheat the oven to 350 degrees C. Mix grated coconut to the thickened milk. Add vanilla essence and almond essence and stir well. Grease a baking tray with butter. Drop spoonfuls of milk mixture on the tray leaving a distance of 5 cm. Keep the tray in oven and bake it for about 10 minutes till the edges of the cookies turn brown in colour.
 
Remove the tray immediately from the oven to avoid sticking. Transfer the cookies into another plate and let them cool.
