Bitter Gourd Pickle

Ingredients:
 
 Bitter Gourds:½ kg
 Red Chilli Powder:2-3 tbsp
 Citric Acid:2 pinches
 Garlic:4 tbsp (peeled)
 Mustard Seeds:2 tbsp (powdered)
 Salt:2 tbsp
 Gingelly Oil:¾ cup
 Dry Mango Powder:2 tbsp
 Turmeric Powder:1 tsp
 Asafoetida:2 pinches
 
Preparation:
 
Cut bitter gourds into circles. Mix turmeric and salt to bitter gourds till they are well coated. Keep it reserved for half an hour. After that boil the pieces in adding citric acid for about 5-7 minutes.
 
Mix turmeric powder, chilli powder and salt to the bitter gourd pieces and let them stand for 10-15 minutes. Remove from fire and strain till they are completely dry.
 
Heat half oil in a frying pan and put the mustard seeds. Add asafoetida when mustard starts to splutter. Remove from fire add cooked bitter gourd, dry mango powder, garlic and mix well.
 
Note: Store in airtight bottle.
