| Ingredients: | | | | | Noodles | : | 2 cups (boiled) | | | Carrot | : | 1 medium Size | | Beans | : | 4-5 | | | Capsicum | : | 1 | | | Oil | : | 3 tbsp | | | Soya Sauce | : | 1 tbsp | | | Vinegar | : | 1 tsp | | | Red Chilli Flakes | : | 1 tbsp | | | Oil | : | for deep frying | | | brinzals | : | 2 large size | | |
| | Preparation: | | | | Cut brinjals into long pieces. Sprinkle salt and keep aside. heat oil in a deep frying pan and fry brinjals till golden. Drain and allow the pieces to cool. | | | | Chop vegetables. Heat 2 tsp of oil and cook them with salt to taste and cover with a lid. Cook on a low flame till th evegetables become tender. | | | | Mix noodles, soya sauce, vinegar and oil and stir fry for 2-3 minutes. Plce the noodles on a baking tray, arrange fried brinjals on top of it. Bake in a preheated oven for 5-6 mintes. Serve hot! | | |
