Brinjal Noodles

Ingredients:
 
 Noodles:2 cups (boiled)
 Carrot:1 medium Size
 Beans:4-5
 Capsicum:1
 Oil:3 tbsp
 Soya Sauce:1 tbsp
 Vinegar:1 tsp
 Red Chilli Flakes:1 tbsp
 Oil:for deep frying
 brinzals:2 large size
 
Preparation:
 
Cut brinjals into long pieces. Sprinkle salt and keep aside. heat oil in a deep frying pan and fry brinjals till golden. Drain and allow the pieces to cool.
 
Chop vegetables. Heat 2 tsp of oil and cook them with salt to taste and cover with a lid. Cook on a low flame till th evegetables become tender.
 
Mix noodles, soya sauce, vinegar and oil and stir fry for 2-3 minutes. Plce the noodles on a baking tray, arrange fried brinjals on top of it. Bake in a preheated oven for 5-6 mintes. Serve hot!
