Tamil Nadu Kara Kulambu

Ingredients:
 
 Potatoes:¼ kg
 Brinjals:¼ kg
 Tamarind:lemon size
 Oil:3-4 tbsp
 Mustard:1 tsp
 Baby Onions:½ cup, peeled
 Garlic:4 flakes, crushed
 Ginger:2 cm, crushed
 Curry Leaves :1 spring
 Tomatoes:2 (chopped)
 Curry Powder :2 tbsp
 Tamarind Extract:2 cups (from lemon size tamarind)
 Salt:to taste
 
 For Curry Powder:
 Red Chillies:20
 Coriander Seeds :2 tbsp
 Turmeric Powder:½ tsp
 Black Pepper Corns:1 tsp
 Bengal Gram:4 tbsp
 Coriander Leaves:2 tbsp (finely chopped)
 
Preparation:
 
Dry roast all the ingredients mentioned for curry powder. Gridn them to a fine powder along with dried curry leaves.
 
Peel and cut potatoes into long pieces. Cut brinjals in length wise.
 
Soak tamarind in 2 cups of water for 15 minutes and extract the juice.
 
Heat oil in a frying pan, add mustard. When it splutters, add curry leaves and onions and fry till onions becomes pinkish. Add garlic and ginger and fry for a minute. Now add potatoes, brinjal and salt. Fry for 2-3 minutes and add tomatoes. Pour in 1 cup of water. Cover and cook till the vegetables turn tender.
 
Remove the lid and add curry powder and tamarind extract. Cook on a low heat till the gravy reaches sambar consistency.
 
Variation:Garnish with coriander leaves and serve hot with rice.
