Merry Plum Cake

Ingredients:
 
 All-purpose (plain) flour:3 cups
 Baking Soda:½ tsp
 Fresh Plums:1 pound
 Almonds (chopped):1½ cup
 Sugar:2 cups
 Vegetable Oil:1 cup
 Eggs:3
 Cinnamon (ground):2 tsp
 Nutmeg (ground):½ tsp
 Ginger (ground):½ tsp
 Tuti – Fruiti:½ cup
 Cloves (ground):¼ tsp
 Vanilla Extract:1 tsp
 Almond Extract:1 tsp
 Salt:¼ tsp
 
Preparation:
 
Preheat oven to 350° F. Line a 9-inch cake pan with aluminum foil.
 
Pit and cut sides of the plums and place them in the bottom of the pan.
 
Dump flour, sugar, and oil into an electric mixture and blend them on low speed till the flour is evenly moistened. Add eggs to the mixture and blend thoroughly.
 
Take a small bowl and mix baking soda, cinnamon, nutmeg, ginger and cloves together. Add the spice mixture to the batter and blend well. Add chopped almonds, tuti - fruiti, vanilla, almond extracts and salt. Mix well again.
 
Pour the batter slowly over the plums in the cake pan. Bake for 50 to 60 minutes, until a tester inserted in the center comes out clean. Set aside to cool and invert the cake onto a serving board.
