INGREDIENTS: Basmathi rice:500gms Brinjals:300gms Onion:1 sliced Ginger:1'piece Garlic:5 cloves Green chillies:3 Tamoto pulp:half cup Fresh grated coconut:1/4cup Oil:3table spoons Coriender leaves FOR POWDERED MASALA: Black pepper powder:1/2 teaspoon Roasted cummin powder:1 tea spoon Coriander powder:2tea spoons Chilli powder:1 tea spoon Cardamom and lavang powder:1 tea spoon. FOR WET MASALAA: Grind garlic, ginger, coriender leaves, coconut. METHOD: 1. Soak rice in water for 15 minutes 2. Wash the brinjals and cut into long pieces,apply salt and keep aside. 3. Heat oil in a pan and fry brinjal peices,keep aside. Again heat oil in a heavy bottomed pan[pressure cooker] add onoins, ground masala, powder masala, fry two minutes, then add tamato pulp and salt. 4. Now add water, when water is boiling.. add rice and fried brinjal pieces. cook till done. 5.Serve hot.
