| I don't know how to make curries, but I can make delicious aTukula upmaa (Courtesy My sister/Janaki's Mom) or Bread Upma (Courtesy Veerabhadra Sastry gaaru). :)

The balance between salt and paprika
The mix and blend of cumin and pepper
The aroma of curry leaves
The soothing coriander leaves
The lentils, the veggies..
A splutter, a sauté, a boil..
A seasoning.
Don’t over do anything, you said,
But mean time, don’t miss anything..
The flavor, the taste depends on the right balance you said..
The moment you wait before adding mustard to oil,
The patience you exhibit boiling the lentils for hours
The skills you show in cutting and just sautéing the vegetables
Are all important for that curry to taste well you said…
Ajji.. still learning to make that curry as you said..
A slow cooker, a pan, a pot
A griddle, a cookbook, 101 spices…
Sometimes pepper slips from the sides of my fingers
Sometimes salt sticks to my hands..
I take a moment to wash it up,
And my veggies get burnt meanwhile..
I still can’t be patient till the oil heats up..
I still can’t make a perfect curry..
Everyday I forget something,
Everyday I double something..
But still..
Hope one day I will succeed making a tasty curry!!
