1.common type(less spicy)
Ingredients
2 large eggs, lightly beaten
2tsp sesame oil
1 tsp salt
2 tbsp groundnut oil
1 quantity of perfect steamed rice, cooled completely
1/4tsp freshly ground black pepper
2 tbsp finely chopped spring onions
Method
1. Put the eggs, sesame oil and half the salt in a small jug or bowl, mix with a fork and set aside.
2. Heat a wok over a high heat. Add groundnut oil and, when it is very hot and slightly smoking, add the cold cooked rice. Stir-fry for 3 minutes, or until it is thoroughly heated through.
3. Next drizzle in the egg and oil mixture and continue to stir-fry for 2-3 minutes or until the eggs have set and the mixture is dry.
4. Add the remaining salt and the pepper and stir-fry for 2 minutes longer, then toss in the spring onions. Stir several times, turn once on to a platter and serve at once.
2.spicy type
Ingredients:
Rice 2 cups
Onion 1 medium
Green chillies 4
Eggs 3
Ginger Garlic paste 1 tbsp
Mint leaves 1/2 bunch
Bay leaves 3
Garam Masala Powder 1 tbsp
Vegetable Oil 3 tbsp
Salt according to taste
Coriander Leaves for garnishing
Method:
1. Fry rice in a pan for 3 minutes. Let it cool down.
2. Wash the rice and drain it
3. Add 3 cups of water and cook it.
4. Cut the onions in long slices. Split the green chilies and cut in half.
5. Boil the eggs in water until cooked well.
6. Now add the vegetable oil to skillet and after the oil is warm enough add the bayleaves, onion to the oil.
7. Stir the onions and once they turn half brown add the chillies to the oil. Stir them so that they do not get sticked to the skillet. Add the ginger / garlic paste and stir well.
8. Cut the cooked eggs into long slices. Add the egg pieces and stir well.
9. After 4 minutes add the garam masala and stir for mixing properly.
10. Leave it on heat on 2 minutes and add the mint leaves before turning off the heat.
11. Now add the cooked rice and gently mix, so that that rice does not break.
3.Chinese Egg Fried Rice (medium spicy)
Ingredients
Basmati Rice (2 cups)
French Beans (1/4th lb)
Capsicum (1 or 2 large)
Cabbage
Green peas
Carrot
6 to 8 large eggs
Salt
Pepper
Chilli sauce or hot sauce
Ajinamoto (A salt which can be bought in Indian grocery)
Soysauce
Method:
Fry cut french beans, sliced capsicum, sliced carrots, cabbage, green peas in 1 Tbsp of oil with little salt, pepper chilli/hot sauce, soysauce and ajinamoto and keep it aside.
In another tbsp of oil break all the eggs into the pan and keep stirring and beating it in a medium flame and add some salt, pepper and some ajinamoto until the egg fries and becomes into small fried egg pieces about 1/2 inch length.
Meanwhile wash the rice and fry it along with already fried vegetables along with some ghee and add 4 cups of water in a medium flame for about 15 min or until the rice is almost cooked. Add the fried egg into rice just before it is cooked and stir it up with a fork and wait till all the water is drained.
Bake the rice in the oven at 350o F for about 10 min and add some coriander leaves and serve with chicken in sauce or wet manchooria.

Suppose laadu cheyadm raaledu anukondi, mixi lo vesi kochm water vesi grind cheyandi. Tharavatha laddu chutandi.
