MIRCHI KA SALAN:
6 no. large size green chillies
3 tbsp oil
1 tbsp coriander seeds
1.5 tsp cumin seeds
2.5 tbsp sesame seeds
1/2 cups peanuts
2 no. red chillies
1 med onion (chopped finely)
3/4 tsp turmeric
1 tsp chillipowder
1 tsp mustard seeds
2 pinch nigella seeds (onion seeds)
1 a few curry leaves
2 tbsp tamarind paste (mix with 1/2 cup water)
1 salt to taste
1 tsp ginger and garlic paste
3 tbsp oil
Cooking procedure:
1) use large green chillies, wash,clean,dry with paper towel and slit lengthways with out cutting chilli in to two. 2) Roast coriander,sesame,cumin alltogether and keep aside along with red chillies. Roast peanuts and remove the skin and keep aside when it is cooled powder the roasted ingredients. 3) In a flat non-stick kadhai add 3tbsp oil keep it on medium heat. when it is hot lay out the chillies flat and covered and cook for 10mins or so and reduce the heat and turn the chillies to the other side and increase the heat to medium and cover and cook again until roasted on all sides. do not over cook the chillies. keep aside. 4) In the same kadhai add 3tbsp oil, add mustard seeds,when it stopped poping add nigella seeds and curry leaves. add onions and fry until golden brown. add ginger and garlic paste and fry well. add turmeric, chillipowder and fry well.add roasted powders and fry well. 5) Add 1cup water and reduce the heat to low and cover and cook for 10mins. 6)add tamarind water, salt to taste mix well and add green chillies and cook cover for 10mins until oil floats on top
